How to make
You will also need:
* Gingernut biscuits
* Equipment needed for chosen cake recipe
* Microwave-safe bowl
* Spoon
* Large bowl
* Two small bowls
To begin, prepare two 8 inch vanilla sponges using a recipe of your own choice. I like to use the Betty Crocker Vanilla sponge cake mix for my sponges. Once baked and cooled, crumble the sponges into a large bowl (ensuring that they are crumbled finely).
Next, add in two large tablespoons of vanilla buttercream into the sponge cake crumbs. We used Betty Crocker Vanilla Buttercream, but you can use any recipe of your choice.
Mix together the buttercream with the cake crumbs until it combines together to make a dough-like consistency.
Top tip: Ensure the mixture is not too wet in order for the dough to hold its shape.
Once made, put aside until later.
In a separate bowl, break up a packet of gingernut biscuits until the crumbs are very fine.
Using the cake dough mixture, separate and mould it into six shapes that resemble chicken nuggets.
Feel free to make extra 'chicken nuggets' if you have leftover dough mixture.
In a microwave-safe bowl, melt down half a bar of white chocolate in the microwave.
Check on the chocolate every 10‐15 seconds to ensure it doesn't burn, starting it at the same time.
Next, place each “chicken nugget' into the melted white chocolate, then dip it into the gingernut crumbs.
Ensure that the 'chicken nugget' is completely covered at each dipping stage.
Repeat this process with the rest of the nuggets.
The chicken nugget cake bites are then ready to be eaten!
Why not serve then in a handmade cardboard container for a truly authentic look?!
