How to Make Coconut Ice
I absolutely love coconut ice, and it's great fun to make too! All you need are four ingredients (you may find you already have some of these in your kitchen cupboard!) and in next to no time at all you'll have yourself a scrummy batch of coconut ice, perfect to give as a gift, or maybe a sweet treat for yourself.

You will need (for 30 squares)
375 grams Desiccated coconut
One 397 gram tin of condensed milk
Put the coconut, icing sugar and condensed milk in a bowl and mix well (the mixture will be quite stiff!). Transfer half the mixture to another bowl and add a few drops of food colouring. Mix it in – you may need to use your hands for this.
Line a tin with cling film and press the white mixture into the base until it's at least one centimetre thick. Then press the pink mixture on top. Lay a piece of cling film over the top and smooth the surface. Put it in the fridge and leave overnight.
Transfer the chilled mixture to a chopping board and cut into small squares.
