These simple Easter grass cupcakes make a great treat for kids and grown ups alike, perfect for an Easter picnic or afternoon pick-me-up.

The grass is created by attaching a grass tip piping nozzle to your piping bag. Make sure that the buttercream you use is thick enough to support it's on weight, or you may end up with some floppy looking grass, if the mixture is a bit slack simply add in some more icing sugar until the desired consistency has been reached.

Step-1
Colour your buttercream green and ensure that the consistency is fairly stiff – add more icing sugar if it is too soft.

Ice your cupcake with the buttercream using a palette knife to level off the top.

Step-3
Fill a piping bag with the remaining green buttercream and attach the grass piping nozzle. Hold the bag directly over the cupcake at 90 degrees and squeeze to stick the grass to the cupcake. Pull the nozzle away sharply to leave the strands of grass.

Step-4
Cover the entire surface of the cupcake and add the chocolate eggs to finish.
