* 100g caster sugar

* 2 large eggs

* 100g unsalted butter

* 100g self-raising flour

* ½ teaspoon baking powder

* 1 teaspoon cinnamon

* Zest of 1 orange

 

You Will Need
* Deco Melts in White, Black, Green and Purple

* Edible eyes

* Sprinkles

* Piping bag

* Small writing nozzle

* Royal Icing

Step 1
Whisk the eggs and sugar together in a stand mixer (or use an electric whisk) for 10 minutes until thick and pale. When the whisk is lifted out of the mixture it should leave a ribbon trail that lasts for 2-3 seconds before sinking back into the mixture.

Step 2

Melt the butter and allow it to cool slightly.

 

Meanwhile, sift the flour, baking powder and cinnamon into the sugar & egg mixture.

 

Add the orange zest and use a metal spoon to fold the dry ingredients into the mixture.

Step 3

Pour in the melted butter and fold in again, being careful to retain as much air in the mixture as possible.

 

Stop folding the mixture when everything is just incorporated.

Step 4

Put the mixture into the fridge for 20-30 minutes.

 

Then, preheat the oven to 180°C fan.

 

Grease the madeleine mould with cake release or melted butter and dust with flour, tipping out any excess.

 

Spoon the mixture into the moulds so that it is almost at the top, but not quite.

 

Bake for 8-10 minutes until the madeleines are golden and risen.

Step 5
Turn the mould upside down onto a cooling rack to remove the madeleines. Leave them to cool before decorating.

Step 6

A simple way to decorate your madeleines is to dip them into melted deco melts and decorate with sprinkles and edible eyes. Alternatively, spoon the melted deco melts into the cleaned madeleine mould and insert the madeleines on top.

Step 7
When the Deco Melts have set hard, remove the madeleines from the mould and decorate with drizzled Deco Melts, sprinkles and edible eyes.
Step 8
Use melted black deco melts to add eyes and a mouth to scary ghosts, or pipe on a spiderweb design with royal icing in a piping bag.
