* Baking Paper

* Sharp Knife

* Rolling Pin

* A Cooling Rack

* Cake Board or Large Platter

* 500g/1lb 2oz Softened Butter

* 375g/13oz Caster Sugar

* 5 Egg Yolks

* 1kg/2lbs of 3oz Plain Flour (plus extra for flouring)

* Grated Zest of 2 Lemons

* 3-5 Tbsp of Milk

* Buttercream Frosting 800g

* 3-4 Tbsp of Icing Sugar

Step 1

Measure the butter and sugar into a bowl along with the zest and beat together until light and fluffy. Beat in the egg yolks. Add in the flour and just enough milk to give a fairly soft dough. Bring the dough together with your hands and wrap in cling film.

 

Chill the dough in the fridge for 1 hour.

 

Preheat the oven to 170C/338F/Gas 3 and line two baking trays with baking parchment. You will need a sharp knife and a cut out of the bunny template.

Step 2

Remove the dough from the fridge and take 2/3 of the dough to cut out your first shape.

 

Take one of the baking parchment pieces from the trays and dust it with flour. Roll the dough out on the parchment paper until large enough to fit the template and cut out with the knife – don’t forget to remove the central circle too!

 

Reroll the scraps with the remaining 1/3 of the dough and repeat so that you have 2 bunny shapes.

Step 3

Transfer the parchment pieces back onto the trays and bake in the oven for 12-18 mins or until pale golden-brown, turning the trays around halfway through the cooking time to ensure an even bake.

 

When the biscuits are baked, leave them to cool on the trays for 10 minutes before carefully moving them onto a cooling rack.

 

Top Tip: If you have any leftover biscuit dough, why not make some mini carrot biscuits using a cutter and create your own grazing dessert with other sweet treats!

Step 4

To decorate, decant the frosting into a bowl and beat in 3-4 tablespoons of icing sugar until pale and stiff. Fit a piping bag with a large round nozzle and fill the bag 2/3 full with the frosting.

 

Put one of the bunny biscuits on a large platter or cake board and pipe neat and even dollops of frosting all over the surface. Carefully lay the other biscuit on top and repeat, piping all over the surface.

 

Now the fun part! Decorate your layered biscuit however you wish – we used pastel meringue kisses, mini chocolate eggs and wafer daisies. You could also drizzle over lemon curd and garnish the cake with fresh fruits!
