How to Decorate a Holly Wreath Cake

A round cake of your choice covered in white icing
Ingredients for cookies:
Cooled boiled apricot jam
Cooled boiled water
Gingerbread dough or shortbread dough pre-made and chilled
Flour
Icing sugar
Roll out the dough on a clean surface lightly dusted with flour to approximately 4mm. Cut out as many Holly shapes as required using the cutter.
On a clean, dry surface knead the two green coloured icing separately until pliable.
Using the same holly leaf cutter used for the biscuit dough, cut out as many shapes as required. Place the icing shapes on to the top of the biscuits and smooth down gently with the palm of your hand. The icing should only cover the top part of the biscuit, leaving the bottom uncovered.
Royal Icing preparation:
Prepare an icing bag using a thin nozzle.
Lastly, once the ready to roll icing has hardened sufficiently, on top of the icing pipe one line down the middle of the cookie and 3 slightly v shaped lines to create veins of the Holly leaf.
Once your cookies are decorated place them in a wreath pattern on top of your cake using the picture as guidance.
