A round cake of your choice covered in white icing

 

Ingredients for cookies:

Cooled boiled apricot jam

Cooled boiled water

Gingerbread dough or shortbread dough pre-made and chilled

Flour

Icing sugar

Baking the cookies Step 1

Roll out the dough on a clean surface lightly dusted with flour to approximately 4mm. Cut out as many Holly shapes as required using the cutter.

Step 2
Place the shapes on a lined baking tray and bake in the oven for 15 to 20 minutes or until golden brown.
Step 3
Remove from the oven and allow to cool on a wire rack. Clean utensils and work surface.
Step 4
Once cooled, brush over the top of the biscuits with a thin layer of apricot jam.
Decoration Step 1

On a clean, dry surface knead the two green coloured icing separately until pliable.

Step 2
Dust the work surface with icing sugar and roll out each colour of the icing in turns to prevent drying until 2-3mm thick.
Step 3

Using the same holly leaf cutter used for the biscuit dough, cut out as many shapes as required. Place the icing shapes on to the top of the biscuits and smooth down gently with the palm of your hand. The icing should only cover the top part of the biscuit, leaving the bottom uncovered.

Step 4

Royal Icing preparation:

Prepare an icing bag using a thin nozzle.

Using a palette knife, paddle the Royal Icing until smooth, spoon into the piping bag.
Step 6

Lastly, once the ready to roll icing has hardened sufficiently, on top of the icing pipe one line down the middle of the cookie and 3 slightly v shaped lines to create veins of the Holly leaf.

Assembly Step 1

Once your cookies are decorated place them in a wreath pattern on top of your cake using the picture as guidance.

Step 2

Using the sprinkletti Scrumptious Sprinkles Gingerbread mix remove the green, white and red balls and use these to decorate your Holly wreath cake to add extra Christmas touch.
