Pre-heat the oven to 180°C. Cream the butter and sugar together in a mixer with a paddle. Beat the egg and add it to the mixture, mix together. Sieve in the flour. Mix until the dough has formed a ball. Wrap in cling film and chill in the fridge.
When the dough ball is thoroughly chilled, remove from the fridge and roll out until it's 0.5 cm thick. Cut out the cookies, place on a baking sheet and then put back in the fridge for 30 minutes; this helps the cookies keep their shape.
Bake your cookies until they are cream in colour – there is nothing worse than a burnt cookie! I don't even allow them to turn golden. Remove from the oven, allow to cool.
To decorate, add a few drops of food colouring to the regal icing and knead until fully blended. Roll the icing out to 2-3mm thick and use the matching cookie cutter to cut out the shape. Brush with water and then sprinkle on the edible stars, silver balls or glitter. Alternatively, you can use piped royal icing.
