How to Make Toffee Apples and Pears

* Lollypop Sticks
* Cooking Thermometer
* 12x Apples and Pears (washed and dried)
* 400ml Cold Water
* 400g Caster Sugar
* 350g Golden Syrup
* Toppings such as Chopped Nuts, Chopped Pretzels, Freeze-Dried Raspberries, Marshmallows
How to make
Push a lolly stick into the top of each fruit and lightly brush a baking tray with a little sunflower or vegetable oil.
Have your selection of toppings ready to go in separate bowls – I used a selection of sprinkles, mini marshmallows, chopped nuts and pretzels and freeze-dried raspberry pieces.
Place the sugar, golden syrup and water into a saucepan and heat to a simmer, stirring until the sugar has dissolved. Turn up the heat and boil until the mixture reaches 146°C, or hard crack stage. Remove from the heat.
Swiftly but carefully dip the fruit into the hot toffee and swirl to coat or use a spoon if needed.
Sprinkle each toffee apple/pear with your topping of choice before the toffee sets hard.
Place on the oiled tray and leave until set.
Once the toffee on the apples and pears has set, they are then ready to be eaten!
