How to Make Christmas Mug Cookies
At this time of year when there's a chill in the air and the nights start to draw in, there's nothing lovelier than curling up with a blanket and a mug of something warm.
These spiced orange mug cookies are a great tasty treat to enjoy with your cuppa! They fit snuggly on the side of your mug and taste of delicious Christmas spices.
This recipe makes 15 - 20 cookies.
You will need

* 75g (3oz) Butter
* 75g (3oz) Soft Brown Sugar
* 2 tbsp. Honey
* Zest of 1 Orange
* 2 tsp. Orange juice
* 225g (8oz) Plain Flour, sifted
* 1 tsp. Bicarbonate Soda »
* 1 tsp. of Cinnamon and 1 tsp. Mixed Spice
To Decorate
* Piping Bags
* Royal Icing - Green, Red and White
* Edible Decorations Such as Glitter or Sprinkles

Preheat the oven to 170 degrees Celsius / 325 degrees Fahrenheit/Gas Mark 3. Place butter, sugar, honey, orange zest and juice in a saucepan and heat gently until the sugar has dissolved and the butter melted. Sieve the flour and dry ingredients in a bowl and add the melted ingredients. Mix well until the dough becomes firm. Place the dough in a plastic bag or wrap in cling film and chill in the fridge for 40 minutes.
Roll out the dough to the thickness of a pound coin and cut out the trees and stars. Use a sharp knife to cut a slot at the bottom of each cookie (approximately 4 centimetres long and 0.5 centimetres wide). Place the cookies on a tray lined with greaseproof paper and put into the freezer for 10 minutes to firm up.
Bake for ten to 15 minutes until they start to brown around the edges. Remove from the oven and place onto a cooling rack to cool completely before decorating.
Put the green, white and red royal icing into piping bags and snip off the very ends. Drizzle each cookie with icing and sprinkle edible decorations on top. Enjoy your cookie perched on the edge of your favourite mug of hot chocolate!
