How to Make Mini Christmas Tree Cakes
It’s that time of year again and you know what that means: Christmas trees! Not the traditional kind, but delicious mini Christmas tree cakes! These simple treats are fun and easy to make, require only a few ingredients, and can be enjoyed at home or as a gift to a loved one.

* Release-A-Cake
* Royal Icing Sugar
* Gel Food Colouring - Holly Green
* Sprinkles
* Mini Christmas Tree Cake Tin/Silicone Mould
* A Wire Rack
* 40z/115g Soft Butter or Margarine
* 4oz/115g Caster Sugar
* 4oz/115g Self-Raising Flour
* 2 Medium Eggs
* 1/2tsp Vanilla Extract
Preheat the oven to 170C/375F/gas 5. Grease the silicone mould with cake release.
Top Tip: If you don’t have cake release, then you can grease the mould with butter and coat with flour, tipping out any excess.
In a bowl, beat together the butter/margarine and the sugar until pale and creamy. Add in the eggs one at a time, beating well and add the vanilla extract.
Sieve in the flour and mix together until the flour is just incorporated.
Place the mould on a baking tray.
Divide the mixture equally between the moulds and bake for 15-20 minutes or until the cakes are golden and well risen.
Turn the mould upside down on a wire rack, and leave for 10 minutes to cool slightly. Release the cakes from the mould and leave to cool completely.
Use a sharp knife to trim away any domed tops or excess cake around the edges.
Mix up 10 heaped tablespoons of royal icing sugar with a little water to make a thick but runny icing.
Colour the icing as desired with green food colouring or alternatively a different colouring.
