Step 1

Start by following the recipe on the back of the box to make the sponges.

Top Tip! . . .I used 3 packets of cake mix (one for each pan).

Once you have your mixture evenly divide it between 3 bowls (I divided it by 4 as I wanted to create a Lego themed cake with 4 colours rather than 3).

Cover the end of a cocktail stick with your chosen food gel and submerge into the mixture, wiping any excess off with a silicone spoon. Mix the gel through the mixture until you have an even colour throughout. Repeat this process with the remaining mixtures.

Before popping the mixture into the tins, grease and line the bottoms with baking parchment. Position the divider equally across the pan and spoon coloured mixture into each section. Level out the mixture and slowly remove the divider and repeat this process 2 more times.

Top Tip! . . .The divider is removed before baking and recommended to be washed before putting into the next cake pan. Also ensure that there is a different colour mixture in each section and different colourways in each pan.

Mix the icing into a bowl and use a palette knife to spread an even layer of frosting on top of the bottom tier and then add the next one on top. Continue in this way until all of the layers have been added and then cover the entire cake in a generous helping of frosting.

Roll out your Ready To Roll icing and cover your cake. Use a cake smoother/polisher to ensure a smooth, professional finish.

Step 8

To make the LEGO Bricks roll out the Ready To Roll Icing using the small rolling pin guide rings to ensure consistency and evenness. Use the smallest square nesting cutter to cut brick shapes into the icing (each square is cut into half to create 2 bricks.) The smallest round plunger is then used to create the circles that sit on top of the brick. Repeat this method for each colour icing.

Top Tip! . . .You will need to make around 50 bricks to cover the cake. Edible glue is not necessary to stick the circles on top of the brick providing the icing is still tacky.

Step 9

Brush a little edible glue onto the cake where you want to place the brick and stick, this is easier if the icing is still a little tacky and hasn't gone hard. Repeat this method until the cake is covered.
